The huge range of uses of sugar means that, with sugar substitutes, it is necessary to produce tailor-made variants, rather than taking a ‘one-size-fits-all’ approach.

Hard and chewy candies, chewing gum, chocolates, baked and cereal products, ice cream, fruit spreads, dietary supplements and even pharmaceutical products are made with Isomalt from Palatinit. Isomalt is the only sugar substitute exclusively derived from sucrose, providing sugar-like sweetness, health and technical benefits for manufacturers.
Palatinit, a subsidiary of German Sudzucker AG, the world’s largest sugar producer, supplies Isomalt worldwide in tailor-made variants. The technological properties of each variant differ in order to achieve optimum results for each application. Isomalt products can be manufactured on conventional production lines replacing sugar in a ratio 1:1.
Isomalt offers a natural sugar-like sweetness without any cooling effect or aftertaste. It is kind to teeth, contains half the calories of sugar and with a very low glycemic response it has virtually no effect on blood glucose and insulin levels – giving the opportunity to bridge the gap between health and indulgence.
Isomalt is the number one ingredient in sugar-free hard candies and guarantees premium quality – even in special sugar confectionery applications such as marshmallows or candy floss.
Applications requiring optimised solubility
Isomalt GS offers an excellent flavour release and a high-impact sweetness – especially in coatings. Isomalt coatings convince with a smooth surface, a perfect crunch and well defined and covered edges and corners. Isomalt GS allows low process temperatures, short coating times and produces a very abrasion-stable coating. Its low hygroscopicity means coatings protect moisture-sensitive ingredients in the centre, so products with functional/active ingredients benefit from excellent storage properties.
In chewing gum coatings, Isomalt GS results in a quick flavour and sweetness onset. Alternatively, working with an Isomalt variant of lower solubility in the centre – such as Isomalt ST – provides extended sweetness and flavour release. Isomalt GS is excellent for applications requiring a high solubility of the raw material, such as baking applications, fruit spreads, ice creams and cereals.
- Besides sweetening, Isomalt improves product life and texture. Its low hygroscopicity reduces stickiness, so using Isomalt in products with a crispy structure improves shelf-life. A study has shown that when the sugar in breakfast cereals is replaced completely or partially with Isomalt, the product has better crunch, extended bowl life and the bite force isn´t reduced - even after six months of storage.
Hardboiled candies
With Isomalt ST all sorts of candies be they filled, stamped or swirled, can be produced. Isomalt ST is an excellent flavour carrier, especially for delicate flavours. Due to its lower solubility, candies last longer in the mouth. For applications such as cough candies, ingredients have more time to take effect. The low hygroscopicity of Isomalt means manufacturers can offer hardboiled candies in convenient packaging, for instance flip-top boxes. There is no need to wrap candies individually because they don’t get sticky, even in heat and humidity. The ‘glass’ of the Isomalt candies is transparent and high quality.
Indulgent chocolate
Chocolates produced with Isomalt LM deliver a pleasant natural sweetness, a full round cocoa flavour, a good snap and fine melting behaviour in the mouth. Standard processing equipment can be used, with dark chocolate being processed at standard conching temperatures up to 80°C and milk chocolate at up to 70°C. With its low water content, Isomalt LM chocolates display low yield stress values, which is excellent for thin coatings. In independent testing, chocolates with Isomalt achieved high ratings in taste, mouth feel and flow properties. Available in different particle size distributions, Isomalt LM is suitable for all refining systems.
Tablets and directly compressed chewing gums
Isomalt DC allows all kinds of compressed products, confectionery and pharmaceuticals to be produced and can be directly compressed on conventional machines. Due to the excellent compressibility and abrasion-stability of this variant, tablets achieve perfect quality with a smooth surface. Reduced stickiness prevents tablets from sticking to tableting tools. For chewable and suckable products, tablets with Isomalt DC can be produced in versatile hardness. Because of the excellent flowability of Isomalt DC, tablet weight variance is minimal, which is important for uniformly metering active ingredients. In combination with compressible gum powder, excellent compressed chewing gums can be manufactured – interesting for manufacturers without classical gum producing equipment.
